The 2021 The Fimasaurus is a blend of co-fermented Merlot and Cabernet Sauvignon from a neighboring property. Racy dark-toned fruit, chocolate, spice, new leather and licorice are all dialed up. As is often the case, the Fimasaurus feels a bit riper than the Cabernet. Time in the glass brings out exotic floral and blood citrus overtones. This, too, needs time to soften.
