Inky dark fruit, gravel, game, scorched earth, licorice and leather give the 2018 layers of savory intensity and nuance that work so well here. All the elements come together effortlessly. Sourced from two acres on Howell Mountain, the 2019 Cabernet Sauvignon Sentinel Ridge features scents of pencil shavings, sage and bay leaf, set against a backdrop of cassis fruit. Full-bodied and softly dusty, it’s still noticeably Howell Mountain in structure but tamed somewhat, presumably by Bevan’s practice of early, thorough leaf-plucking to expose the fruit. Yet it still has a certain mountain austerity when compared to Bevan’s plush valley-floor wines. [Joe Czerwinski, 05/31/2022]
